🌱 Intro

Welcome to this Korean Long-form Reading session.

If you want to improve your Korean effectively, I recommend practicing by reading long passages consistently.

In this article, we will explore Korea’s vegetable-centered diet and its health benefits.

1. Longevity Secrets

When traveling in Korea, you are often surprised that someone who looks like a college student is actually in their 40s.

💡Grammar point: “~다 보면” = “if you keep doing ~ / as you do ~ over time.”
It describes something you notice as a natural result of an ongoing action.

Of course, genetics and consistent skincare also play a role, but another reason many people notice is Korea’s traditional food culture.

💡 Grammar point: “A도 영향을 미치지만, 또 다른 이유는 B이다” = “A also has an influence, but another reason is B.”
Acknowledge one cause, then introduce the main point.

2. Plant-Based Habits

Traditional Korean food is more vegetable-oriented than processed food or excessive meat consumption.

A single meal typically includes various seasoned vegetables and side dishes, and soups and stews also contain many kinds of vegetables.

As a result, people naturally consume vitamins, minerals, and dietary fiber.

Regularly eating a variety of vegetables, root vegetables, and fermented vegetables provides abundant nutrients and antioxidants that help maintain a healthy lifestyle.

💡 Grammar point: “~는 데 도움을 줍니다” = “helps with ~ing / helps in ~.” “데” nominalizes the preceding clause so it can be the object of “도움을 주다.”

Recently, various eating styles have become popular, but the basic principles of the Korean table have remained largely unchanged for a long time.

3. Veggies with Meat

Korean barbecue is centered on meat, but eating fresh vegetables together is the norm.

Wrapping meat in lettuce or perilla leaves with raw garlic, green chili peppers, and ssamjang is a very familiar eating habit for Koreans.

This naturally leads people to consume a wide range of plant-based foods alongside meat.

This principle extends to noodle dishes as well.

Noodles are also accompanied by cucumbers, water parsley, carrots, and other vegetables.

This food culture considers not only flavor but also texture and nutritional balance.

💡 Grammar point: “~뿐만 아니라 ~도” = “not only ~ but also ~.” Once you spot “뿐만 아니라,” expect a second item introduced by “~도” shortly after.

4. Dietary Education

In Korean food culture, the education of eating habits at home also plays an important role.

Korean children are taught not to be picky and to eat a balanced variety of the food placed on the table.

If a child tries to eat only meat or leave vegetables uneaten, they’ll hear something like, “You’ll get in trouble if you’re picky.”

💡 Grammar point: “~려 하면” = “if (someone) tries to ~.” It signals an attempted action, and the following clause usually describes the consequence.

This teaching goes beyond simple manners and is part of the process of forming a balanced diet.

It will be the best chance to experience a healthy table.

7. The Shadow Side of Korean Food, With Real Statistics

Korean food isn’t just about vegetable-centered strengths. According to the 2023 National Health and Nutrition Examination Survey analyzed by Korea’s Ministry of Food and Drug Safety, the average daily sodium intake for Koreans is 3,136mg — 1.6 times higher than the World Health Organization’s recommended 2,000mg.

The good news is this figure is on a downward trend. Compared to 4,789mg in 2011 (before reduction policies began), it has dropped 34.5%, and it’s also down about 4.7% from 3,289mg in 2019.

Over half of this sodium comes from noodles/dumplings, kimchi, soups/stews, stir-fries, and jjigae/jeongol. In other words, the soup-, stew-, and kimchi-centered food culture described in this article is great for vegetable intake, but it’s also a major source of excess sodium.

Sugar intake is also worth examining. As of 2023, the average daily sugar intake for Koreans was 35.5g, a level similar to 36.8g in 2019.

8. Practical Ways to Reduce Sodium

Don’t Finish the Broth: A lot of sodium dissolves into the broth of soups and stews. Just eating mostly the solid ingredients and leaving the broth can significantly cut your intake.

Moderate Your Kimchi Portions: Kimchi is a great fermented food, but it’s high in salt. Enjoying just one or two pieces per meal is a balanced approach.

Watch Out for Processed Noodles and Instant Foods: Instant ramyeon, packaged cold noodles, and processed dumplings often have very high sodium, so it’s better to enjoy them occasionally rather than often.

9. Sample Day of a Healthy Korean Diet

Breakfast: Brown rice, tofu doenjang soup (mostly solids, less broth), two seasoned vegetable side dishes, a bit of seaweed.

Lunch: Multigrain rice, grilled fish or lean meat, stir-fried vegetables, one or two pieces of kimchi.

Dinner: Vegetable-centered bibimbap (a small amount of gochujang), a tofu or egg side dish, seasoned vegetable side dishes.

💡Tip: Rather than having soup or stew with every meal, including a broth-based dish just once a day is also a good way to reduce sodium.

10. How to Choose When Eating Out

Choose Bibim/Grilled Dishes Over Soup Dishes: When eating out, choosing bibimbap, grilled dishes, or stir-fries over broth-heavy menus helps reduce sodium intake.

Vary Your Side Dishes, Ask for Sauce on the Side: Enjoy a variety of side dishes, but request dipping sauces or seasoning separately so you can control the amount.

Use a Hansik Buffet: The Korean buffet mentioned in this article lets you choose your own vegetable side dishes, making it a good option for enjoying variety while controlling sodium.

11. Healthy Choices at Marts and Convenience Stores

Seasoned vegetable packs, tofu, eggs, cherry tomatoes, and pre-cooked vegetable packs are healthy options easily found at most marts and convenience stores.

When choosing instant foods, checking the sodium content label lets you immediately see what percentage of the daily standard it represents.
